Onion and green onion


Storage:

Onion: Early in seaon, onions will come fresh with greens attached.  Separate the greens from the bulbs and store the greens like green onions.  Bulbs can then be kept on the counter for weeks and will develop a papery skin as they dry out.  You can prevent the papery skin from forming by keeping them in the fridge in a plastic bag.

Later in the season, onions will be cured (with papery skin) and can be kept on the counter until use.

Green onion: 10+ days in a bag in the fridge.  Can be stored prechopped in a sealable container to be easily added to salads, stir fries, scrambled eggs etc.


Preserve: Onions can be chopped and put into a plastic bag and frozen.  Make sure your bag is well sealed so other things in your freezer don't get contaminated by the aroma of onions


Tips: Breathing through your mouth while you cut onions can cut down on tears
