Tomatoes



Storage: 7-10 days on the counter, depending on how hot it is. Cherry tomatoes don’t last as well as larger ones.


Preserve: Can be tossed into a freezer bag. To use, run frozen tomatoes under water to remove skins. Tomatoes can also be canned or dehydrated. There are SO many things you can do with tomatoes


Tips: Yellow, orange and pink tomatoes tend to be lower in acidity and often sweeter. Black tomatoes have a lovely richness to their flavour. Red tomatoes are classic!





Oven Roasted cherry tomatoes

(inspired by Shelly Goodson, Queen of Cups Restaurant)


Put any quantity of whole cherry tomatoes in an oven proof baking dish. Add a generous amount of minced garlic, olive oil, balsalmic vinegar and roast in the oven at 350 until the tomatoes pop.

Great in wraps, on salads, on crusty bread, tossed with pasta…
